It’s a work of art and a breakfast treat all in one.
SAVOURY ALL-BRAN, BILTONG AND DATE MUFFIN
PREP TIME: 15 MINUTES | COOK TIME: 20 MINUTES | YIELD: 12 MUFFINS
90g Kellogg’s All-Bran Flakes
1 egg
180ml milk
120g wholewheat flour
5ml bicarbonate of soda
30ml butter, melted and slightly cooled
1 apple, peeled and grated
120ml honey
20ml biltong powder
80g sliced biltong, chopped
70g dates, pitted and chopped
30g raisins
Preheat an oven to 180C.
Grease a muffin tray with cooking spray.
In a bowl, beat the egg with milk, mix in the Kellogg’s All-Bran Flakes, allow this to stand until the Kellogg’s All-Bran Flakes absorbs the liquid, about 5 minutes.
Gently mix in dates, raisins, wholewheat flour, bicarbonate of soda, biltong powder, melted butter, grated apple, sliced biltong and honey; stir a few times to mix.
Spoon batter into prepared muffin cups.
Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
Serve with a savoury chutney and mature cheese.
